The cell walls of mushrooms are made of chitin, a natural fibrous substance that is indigestible in the human gut. The chitin cell walls can be partially broken down with alcohol. We use leading Ultrasonic Assisted Extraction (UAE) technology. With the combination of water, alcohol and UAE, we are able to extract water-soluble and alcohol-soluble compounds from the mushrooms. What exactly is Chaga mushroom?

Chaga mushroom is a type of mushroom that grows mainly on the burst of birch trees in cold climates, such as those of Scandinavia, Siberia, Canada and Alaska. In Dutch we call the mushroom Berkenweerschijnzwam, in English chaga mushroom and in Latin Inonotus obliquus. For centuries, chaga has been used as a traditional medicine in Scandinavia, mainly to boost the immune system and for general health. Extraction 2.0 – Why do we extract?

Mushrooms require an extensive extraction process to make their interesting compounds bioavailable. That’s because the cell walls of mushrooms are made of chitin, a natural fibrous substance that is generally considered indigestible in the human gut. For example, if unextracted mushroom powder is consumed, most of the compounds would pass right through the human digestive tract.

However, behind the chitin walls lie valuable components that are beneficial to our health. While cooking can help bring out some of the medicinal properties, there is one preparation method that allows for the most optimal bioavailability of medicinal mushroom compounds: extraction.

Through certain extraction methods for each species of mushroom, the interesting compounds become bioavailable. Extraction also allows us to concentrate the compounds of interest for our mushroom tinctures. Therefore, extraction is fundamental in creating an effective mushroom supplement. So by carefully extracting mushrooms, we ensure that they become biologically available to humans and have an active effect as soon as they are digested.

The compounds of interest to KÄÄPÄ Health are those that have been clinically shown to evoke health-promoting effects, such as β-(1,3)-(1,6)-D-glucans, or simply beta-glucans.

Why do we extract as we extract?

At KÄÄPÄ Health, we use leading Ultrasonic Assisted Extraction (UAE) technology to produce pure and potent mushroom extracts. The advantages of using the UAE method are to optimize the bioavailability of compounds of interest in mushrooms. This new technology increases the effectiveness and efficiency of the extraction process.

UAE also allows us to extract at lower temperatures, which is beneficial for heat-sensitive compounds. Heat is needed to extract certain compounds, but too much heat can also destroy other important compounds. By increasing extraction effectiveness with UAE while reducing heat, we can produce more potent, broader spectrum mushroom extracts.

Combined with the UAE, our extraction protocols also use traditional extraction processes. All mushrooms require hot water and many are also followed by extraction with ethyl alcohol. The hot water releases the water-soluble compounds and the alcohol extract dissolves the chitin to release the water-insoluble compounds. In the UAE, a very high-frequency shock wave (also called acoustic cavitation) is used to break down the cell walls of the mushroom and release the compounds of interest without damaging the compounds. This not only greatly increases the yield of compounds of interest, but also reduces the time required for extraction.

The story of Kääpä Health Biotech

KÄÄPÄ means polypore in Finnish, which is the original form of mushrooms – the essence of mushrooms, so to speak. KÄÄPÄ as a company is exactly the same: focused on the origins of mushrooms.

How it all began

Eric Puro, CEO of KÄÄPÄ Biotech, began growing mushrooms in his backyard in 2014, but like all important stories from Finland, this one also begins from a sauna:

KÄÄPÄ began in 2016 when Eric invited his friend to a sauna, who brought a friend from mycologist Lorin von Longo-Liebenstein. Those long discussions about fungi between löyly (steam) and avanto (hole in the ice) evolved into collaboration and lifted Eric’s mushroom cultivation to a whole new level. Soon an old friend Henri Lokki and Seppo Riikonen joined the co-founders.

The very first mushroom growing trials were done at Seppo, and in the kitchen and garage of his wife, Arja. Shortly thereafter, marketing expert Otso Mursula joined the group and strengthened theirs in this regard through his commercial expertise from the mushroom products industry. The founders began growing mushrooms together and developing the company around the idea of mushroom biotechnology.

KÄÄPÄ Farmhouse

Since then, the mushroom farm has steadily expanded by a thousand logs to the current cultivation of 20,000 logs for medicinal mushrooms. On the outdoor mushroom farm, we learned from nature what mushrooms need in terms of growing conditions. With the experience gained from our outdoor nursery, we know which environmental factors contribute to creating the most potent mushrooms full of the interesting compounds.

Now our outdoor mushroom farm has become our research and development laboratory. Today we use all the knowledge we gained there and put it into practice in our indoor mushroom growing facilities. We mimic natural conditions to create the most powerful products sustainably and on a larger scale.

For the mushrooms, we use the same Finnish birch substrate as on the farm. Finland has the cleanest air and water ever measured, and the clean forests ensure that our mushrooms eat the healthiest and cleanest food – the birch trees. The substrate is FSC and/or PEFC certified because of our commitment to sustainable forest practices. Based on our farm experience, we control growing conditions such as temperature, humidity, O₂ and C0₂ levels, light and added stressors to produce mushrooms with the highest levels of compounds of interest.

World’s largest chaga cultivation network

KÄÄPÄ Forest is a sub-branch that promotes versatile use of forests and forestry of Chaga. KÄÄPÄ Forest manages the largest Chaga cultivation network in the world. Because Chaga grows very slowly and is over-harvested in the world, we intervened to address this problem by starting this large-scale Chaga cultivation. Today, KÄÄPÄ Forest cultivates Chaga around Finland in the continuously growing network area that currently exceeds 200 hectares.

Working closely with forest owners creates a truly transparent growing environment for our mushroom production. It is important for us to change the scenario of our Nordic forests being cut down for use by the paper industry – instead we support the cultivation of medicinal mushrooms in our local forests.
